Waste not, want not

Food waste is a big topic for discussion in recent times. First of all, supermarket produce which is past the sell by date just gets thrown into a skip, still perfectly edible but due to various rules and regulations the supermarkets have to discard the food. Although, changes are being made to stop or at least reduce the wastage. Jamie Oliver and Jimmy Doherty on their tv show Jamie and Jimmy’s Friday Night Feast have publicised and discussed community fridges where people can bring their surplus food, both purchased and home grown, for other people to make use of and in turn they can help themselves to anything that they may be able to use. This is a great idea and these community fridges are popping up all over the country.

Secondly, the other form of food waste is when we misjudge quantities and cook too much. Often these left overs just get thrown into the bin or shoved to the back of the fridge. We’re all guilty of this.

We hate food waste and it happens far too much. So to highlight the issue we would like to show our readers our recent use of lovely left overs!

Right up there with steak is tapas, we love tapas. But it’s one of those things where it’s easy to make too much, lots of delicious delights but always too much to eat!

Here we have:

Homemade patatas bravas

Chorizo with balsamic glaze

A mixture of olives

A selection of cured meats

Comte cheese

Homemade meatballs with a spicy tomato sriracha sauce and parmigiana reggiano

Ciabatta based bruschetta with Abergele goats cheese, rocket, sweet pepper, sun dried tomato, anchovy fillets with a chilli oil dressing

There was plenty left over. So, waste not, want not, a scrumptious sandwich was created!

Here is a ciabatta using cured meats, Comte cheese, sweet peppers and a garlic and herb aioli.

Prepared at home, wrapped in grease proof paper and taken to work.

Grease proof paper removed, dampened with a little water to ensure the bread doesn’t go hard and to help melt the cheese without it going chewy.

Re-wrapped around the sandwich, popped in the microwave for a few minutes until hot.

Cut in half and ready to eat!
